Chili con carne recipe – healthy weekday dishes

This recipe is one of my go-to weekday dishes: the chili con carne.
It has beautiful vibrant coloured vegetables and a slightly sour kick, that just fits perfectly together with the white rice.

Ingredients:

1 lettuce
2 garlic cloves
2 tablespoons of chili con carne spice mix or your own blend of spice mix
(jalapeños, cumin, coriander, onions, tomatoes, paprika, garlic, oregano, pepper)
2 spring onions
2 bell peppers or paprika
600g of minced beef
1 can of San Marzano tomatoes
2 fresh tomatoes
2 cups of jasmine rice
1 lime
Tabasco sauce
1 corona
