This Chicken Chili is is perfect to cozy up with during those chilly days or snow storms. It is the perfect combination of hearty beans and chicken, with a nice addition of veggies. It’s very easy to make and great to pop in the pressure cooker in the morning and leave it cooking all day for a easy all ready done dinner!

Ingredients:
1 Whole Chicken or 4 large Chicken Breast
1 Tbs Olive Oil
1 Onion
1 lb dried black beans
3 Garlic Cloves (peeled and minced)
6 c. water
2 Bell Peppers
2 (28oz.) cans of crushed tomatoes
Seasonings to taste: Chili Powder, Cumin, Salt, Pepper.
Suggested Toppings:
Cheese
Cilantro
Sliced Jalapeno
Sour Cream or Plain Greek Yogurt
Lime Juice
Serve with:
Tortillas
Tortilla Chips
Fresh Bread
