This recipe is for Extra Spicy Chili Oil Noodles. Spicy but delicious noodles. But you can vary the spiciness because I use my own homemade spicy chili oil. Includes how to make your own hand pulled noodles. These noodles are called belt noodles or “biang biang” noodles. Biang biang noodles are famous noodles originating from Xi’an, China. If you don’t want to make your own noodles, I show you how to cook package dry noodles that were hand made. A simple but delicious noodle recipe. Enjoy!

Making Handmade Noodles:
2 cups all purpose flour
1 teaspoon salt
1 cup warm water
In a large mixing bowl, put flour in. Add salt and mix well. Gradually add
warm warer. Use a spatulla to mix flour. Then use your hand to knead dough for about 10 minutes. I have a wide mixing bowl, so I don’t have to take the dough out when I’m kneading the dough.
Cover the bowl with cellophane and let stand for 30 minutes. You can use the dough after 30 minutes. For a more relaxed dough, cover the dough again for 1 to 2 more hours.
When time is up, divide the dough into 3 pieces. Roll out each piece with a rolling pin. Roll the dough as thin as you can. Cut the dough into 1 1/2 inch strips lengthwise. Stretch each piece of dough by banging and stretching each piece against the table or cutting board.
To cook the noodles, bring water in a pot to a boil. Add 1 teaspoon salt and 1 to 2 tablespoons cooking oil. Let noodles boil for 1 1/2 to 2 minutes. Strain noodles in a strainer.
Note: you can use package dry noodles for this recipe. There are dry hand pulled noodles that you can buy. They often come in indivdual portions. I use 2 dry noodle portions for this recipe. The noodles I use take 5 minutes to boil. Put noodles in a strainer after boiling.
To Serve Noodles:
3 tablespoon light soy sauce
3 tablespoons black vinegar
1/3 cup spicy chili oil (homemade or store bought chili oil)
2 to 3 tablespoons chili flakes
Put noodles on a plate. Heat chili oil at low heat. If you do not have chili oil, heat 1/3 cup peanut oil, or other cooking oil. Put soy sauce, black vinegar and chili flakes on noodles. Pour hot chili oil or hot cooking oil over noodles. Enjoy!
