Simple Grilled Fish with Chili Paste

Grilled fish is a very simple dish that can be spiced up with some chilli paste. This recipe pre-cooks the chilli paste, or sambal, before wrapping it and grilling the fish in a pan. Enjoy! Ingredients & Utensils ↓

Simple Grilled Fish with Chili Paste
Ingredients:
4 pieces of Mackerel, washed, cleaned and cut open at the back of the fish
10 pieces of guajillo chilli, soaked in hot water for 20 minutes:
10 pieces of dried chilli, soaked in hot water for 20 minutes:
2 candlenuts:
1 cup of shallots:
1/2 inch knob of turmeric:
1 knob of galangal:
4 cloves of garlic:
3 tbsp of tamarind water:
2 stalks of lemongrass, cut into small pieces:
1/2 tbsp of belacan:
1/2 dried shrimps
1/2 tbsp of salt
1 tbsp of sugar
1 tbsp of fish sauce:
4 tbsp of cooking oil:
150 ml of water
4 galangal leaves
2 turmeric leaves, optional
