Hello everyone! I am so excited to share this video with you! Today I’m making Keto Chili. A nice bowl of this will be sure to warm you up even on the coldest day. With a special 10-ingredient spice blend, this chili is so flavorful you won’t even miss the beans! Here’s what you’ll need:
1 to 2 lbs. ground beef (I freeze my beef in 20 oz. portions and this was a good amount for the amount of chili I made)
1 14 oz. package of Andouille sausage (I used spicy)
1 C. onion, diced
1 C. carrot, diced
1 14 oz. cans of diced tomatoes (blend one can in blender)
2 C. water
1/2 tsp. – 1 tsp. xanthan gum (add at the end as a thickener)
Spice Blend:
1/4 C. chili powder
1 TBSP cumin
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. Umami seasoning blend (Trader Joe’s)
1 tsp. onion salt (or onion powder with a little extra salt)
2 tsp. paprika
2 tsp. smoked salt (regular salt can be used instead)
1/4 tsp. ground celery seed
1/4 tsp. cayenne powder (reduce to 1/8 tsp. for mild or omit entirely if you don’t want it spicy)
This makes about ten 1 cup servings. Each serving has approximately 3.5 net carbs. Please keep in mind the toppings you add will increase carb count. I topped mine with bacon, sour cream, shredded cheese, and avocado for the picture! Enjoy!
