Preparation
Marinate 500 gms of mutton with salt to taste and a spoon of turmeric powder for 1 hour. Heat a pan and pour in 10 ml of oil. Put in 2 cardamoms, 2 cloves, a quarter spoon of caraway seeds and a few cinnamon sticks and saute till the smell comes out of the spices. Add the mutton or lamb to this and saute for two to three minutes. Pour in 300 ml of water and mix and cook the mutton for 10 minutes in the pressure cooker.Heat the pan and put in 2 spoons of sesame seeds and saute till yellow and take off the pan. Put in two spoons of poppy seeds and saute till yellow and take off the pan. Pour in 10 ml of oil and put in 25 gms of cashew and saute till brown and take off the pan. Put in two onions cut into small pieces and saute well till golden brown and take off the pan. Put in 100 gms of grated coconut into the pan and saute till brown and take off the pan. Put all these ingredients in the grinder and grind well. Heat the pan and pour in 15 ml of oil. Put in 25 gms of garlic and ginger and saute well. Put in half a spoon of cumin seeds and saute well. Add half a spoon of garam masala and one to two spoons of chili powder and saute well. Add the ground coconut -oil mixture and saute till the mixture dries up. Add this to the half cooked mutton. and mix . Add salt if needed. Mix well. Add 100 ml or more of water and let the mixture cook for another 15 minutes in the pressure cooker and take off the flame and serve
