Mango Black Bean Chilli:
Ingredients:
Onion diced 1
Garlic minced 3
Jalapeno pepper diced 1
Tomatoes diced 2 cup
Cooked black beans 2 cup
Orange juice 1/2 cup
Chili powder 1 tbsp
Cumin 1 tsp
Paprika 1/2 tsp
Cinnamon powder 1/2 tsp
All spice powder 1/4 tsp
Diced ripe mango 2 cups
Salt and pepper to taste
Oil 1/4 cup
For Topping:
Lime wedges for garnishing
Chopped mango for garnishing
Method:
Add onion into hot oil and sauté for few minutes, add garlic along with tomatoes cook for a while then add all spices and mix well. Stir in the mango, along with 1 cup of water and cover, and cook for another 2 minutes- just enough to warm the mangoes. Scoop into large bowls and top with mangoes and lime wedges.

Chicken Mango Curry :

INGREDIENTS
Chicken breasts, cut in strips 300 grams
Mangoes chopped 3
Capsicum, deseeded and sliced 1
Onion, cut into wedges 1
Grated ginger 1 tbsp
Garlic, crushed 3cloves
Oil ¼ cup
Coconut cream 200ml
Brown sugar 1 tbsp
Green onions, sliced 2
Coriander leaves 2/3 cup
Yellow curry paste 2 tbsp
Turmeric 1 tsp
Fresh long red chili, sliced 1
Lemon wedges to serve
Steamed rice to serve

METHOD
Combine the curry paste and turmeric. Add the chicken, season and toss well to combine. Heat oil. Add onion, ginger, garlic, capsicum and chicken and cook until golden brown. Add blended mango, little water and add coconut cream and cook until the sauce thickens slightly. Stir in the remaining mango along with the sugar. Serve chicken sprinkled with green onions, coriander, chili, lemon wedges and steamed rice.
