Anyways, today I am showing you one of my favorite quick, easy and healthy recipes: a vegan chili. Since Foodie Beauty asked for healthy recipe ideas on a recent community post, I thought this might be fun š
Recipe:
Ingredients:
-2 tablespoons of olive oil
-1 medium red onion (chopped)
-2 cloves of garlic (chopped)
-1 can of sweetcorn
-1 can of red kidney beans
-1 can of diced tomatoes
-1 tablespoon of chili powder
-1 teaspoon of ground cumin
-1/2 teaspoon of ground black pepper
1. Add the oil to a pot or frying pan and let it get hot.
2. Add the onion and sautƩ until translucent and maybe a little brown.
3. Add the spices and sautƩ until fragrant.
4. Add the sweetcorn and garlic and sautƩ for a couple of minutes.
5. Add the red kidney beans and sautƩ for a couple of minutes.
6. Add the diced tomatoes and let simmer for about 20 minutes, stirring once in a while.
7. Serve with whole wheat bread, quinoa, brown rice or whole wheat pasta.
