• 20g Fresh ginger (approx 2 inch piece)
• 1 Bird’s eye chilli
• 3 Japanese / Persian Cucumbers (or 1 English cucumber)
• 1 + 1 teaspoon Salt (1 for rolling, 1 for pickling)
• 2 tablespoon Sugar
• 1 teaspoon Sushi Vinegar OR Rice vinegar
• 1 teaspoon Soy sauce
• 1 teaspoon Sesame oil
• White sesame seeds to garnish before serving (optional)
