Bird’s eye chili wine recipe | Healthy wine recipe without using yeast | Coorg style wine recipe

Check this homemade recipe made using pungent tasted chili i.e., bird’s eye chili. It is used extensively in many Asian cuisines and provides various health benefits like reducing blood pressure, cholesterol, weight and other heart ailments.
This wine is made from bird’s eye chili, sugar and small amount whole wheat. Wheat is used for fermentation instead of yeast here. Wheat can also be replaced by rice or ragi( finger millet) but fermentation days varies.

INGREDIENTS:

Bird’s eye chili – 15 to 20 pcs
Sugar – 1 cup (250 grams)
Wheat – 2 tsp (for fermentation)
Water – 3 cups (750 ml)

Instructions to prepare wine:

1. Add washed bird’s eye chilli into an air-tight container.
2. Add sugar, wheat, 1 cup of boiled and cooled water and cover the lid.
3. Keep the container in the dark place for 20 days. Stir once or twice in-between.
4. After 20 days, strain the contents into a vessel, add 2 cups of water, mix well and transfer it into a glass container.
5. Cover the lid tightly and place it in dark place for another 5 days so that it will ferment well.
6. After 5 days, wine is ready to serve. The taste gets better as it ages. It can be stored up to 1 year, just make sure you use good chilies and boiled and cooled water in this wine making process.
