Chilli Vegetable Fried Rice

Chilli Vegetable Fried Rice

Servings – 3

INGREDIENTS
Rice – 180 grams
Water – 500 millilters
Dry red chili – 6
Warm water – 50 milliliters
Garlic cloves – 5
Salt – 1/2 teaspoon
Sugar – 1/2 teaspoon
Vinegar – 1 teaspoon
Water – 2 tablespoons
Water – 1.5 litre
Salt – 1/2 teaspoon
Oil – 1 teaspoon
Oil – 1 tablespoon
Onion – 100 grams
Carrot – 50 grams
Bell pepper – 50 grams
Oil – 1 teaspoon
Mushroom – 60 grams
Oil – 2 teaspoons
Ginger – 1 teaspoon
Garlic – 1 teaspoon
Onion – 2 tablespoons
Salt – 1 teaspoon
Black pepper – 1/4 teaspoon
Prepared chilli paste – 2 tablespoons
Soy sauce – 1 teaspoon
Spring onion – for garnishing

PREPARATION
1. In a bowl, add 180 grams rice, 500 milliliters water and soak it for 30 minutes.
2. In a small bowl, add 6 dry red chili, 50 milliliters water. Soak it for 10 minutes.
3. Now, take soaked dry red chili, add 5 garlic cloves, 1/2 teaspoon salt, 1/2 teaspoon sugar, 1 teaspoon vinegar and 2 tablespoons water.
4. Transfer it to a blender and blend it well .
5. In a skillet, add 1.5 litre water, 1/2 teaspoon salt, 1 teaspoon oil and soaked rice.
6. Stir once and bring it to boil.
7. Cook for 8 – 10 minutes.
8. Remove it from heat and keep aside.
9. In a heavy bottom pan, heat 1 tablespoon oil, add 100 grams onion, 50 grams carrot, 50 grams bell pepper. Mix it well.
10. SautĆ© it for 3 – 4 minutes on medium heat.
11. Remove it from heat.
12. Heat 1 teaspoon oil in another pan, add 60 grams mushroom. Stir it well.
13. SautĆ© it for 3 – 4 minutes on medium heat.
14. Remove it from heat and keep aside.
15. Heat 2 teaspoons oil in a pan , add 1 teaspoon ginger, 1 teaspoon garlic stir once and 2 tablespoons onion.
16. Stir it well.
17. Now, add sautƩed vegetables, and mushrooms. Mix it well.
18. Add 1 teaspoon salt, 1/4 teaspoon black pepper, 2 tablespoons prepared chili paste and 1 teaspoon soy sauce.
19. Mix it well.
20. Now, add boiled rice and give it a nice mix so all the ingredients combine together properly.
21. Cook for another 1 minute.
22. Remove it from heat.
23. Garnish it with spring onions
24. Serve hot.
