I love Texas Style chili. And this here is some of the best chili ive ever made. This is a no beans chili. That said, beans can easily be added to this chili recipe. The key here is that beer and cornmeal. So amazing and so hearty. This Texas-style chili is perfect for those fall chili winters nights.

The recipe-
1-1.5 Lb Ground Sirloin
1/2 lb Bacon
2.5 to 3 Lb Chuck Roast(nicely marbled)
Canned Tomatoes, diced and whole 1 Large whole, 2 small diced!
1 Green Pepper
1 Red Pepper
1 Jalapeno Pepper
1 Serrano Pepper
1 Poblano Pepper.
1-2 Onions
Add or subtract which peppers you want!
The Seasonings-
1 TBS Cumin
1 TBS Cayenne pepper
1 TBS Paprika
3 TBS Chili Powder
3-4 Garlic Cloves
Smoke Chuck Roast and rest!.
You want Hearty Chunks and Slices! PREP! PREP! PREP!
Cook Bacon 3/4 crispy and add onions, Garlic, Peppers. From there cook down. You can deglaze with 1/2 cup-1 cup beer AFTER 20 minutes or so,. (Make sure peppers, onions are soft to the touch but not overdone)!
Add Ground Sirlion and continue cooking(Simmer) 1 Hour. At that time you can add your seasonings and canned Tomatoes. Simmer 1 more hour. After hour 2 skim some liquid. Add Chuck and simmer for 1 more hour. Skim add 1/2 can beer and 1/2 cup of cornmeal. Simmer down 10 minutes and enjoy!
