Ingredients:
1 green bell pepper
1 medium yellow onion, chopped
1 small butternut squash, cubed
1 medium poblano pepper, chopped
2 cloves garlic, minced
2 tbsp tomato paste
2 tbsp chili powder
1/4 cup olive oil
2 tbsp tomato paste
3 cups shredded rotisserie chicken
32 oz chicken broth, low sodium
1 can diced fire roasted tomatoes, undrained
1 can black beans, rinsed & drained
Salt/pepper taste
Fresh cilantro
Topping options: sour cream, tortilla chips, shredded cheese
