Recently returning from my first trip to Croatia, my new Cro friends showed me their TikTok video on how they made “ajvar” from scratch. It was amazing. Ajvar is basically a peppers and eggplant condiment but some call it a vegetarian caviar! I replaced my diced tomatoes with a 1/2 cup of ajvar and it was delish!
