Vinnie’s Chili
3 lbs ground chuck ( or whatever ground meat you like)
3 envelopes of Chili-O mix
3 cans dark red kidney beans
1 small can tomato paste
1 can stewed tomatoes
1 small diced bell pepper
1 small diced onion
salt to taste
chili powder to taste
Brown ground beef with onions and bell pepper. Drain and rinse the ground beef. Add the browned beef, beans, tomatoes, chili-o and seasonings to a large pot. Bring to a boil then turn down to low and let simmer for 30 to 40 minutes.
Serve with cheese and corn chips or saltines. Yummy!
