My husband generally did the vegetable shopping for everyweek,so always there is sweet corn in our list.But this time he dint bring as he dint get any good quality.So I just casually said if not sweet corn atleast buy some baby corn…and on the next day he bought babycorn thinking that to have baby corn Manchurian,but how many times I prepare s this time I decide something easy yet yummy I will prepare with this…so this recipe strikes to my mind…as husband is oming for lunch so it’s a yummy surprise for him…so lets get started this yummy recipe

Frying Time 6 to 8 min per batch
Serving Persons 3 to 4

Ingredients

8 to 10 babycorns 1/4 tsp turmeric powder 1/2 tsp garam masala 1 n 1/2 tsp red chili powder 1/4 tsp black pepper powder 10 to 12 curry leaves chopped 1 tbsp chopped coriander leaves 2 to 3 green chili chopped 2 tsp ginger-garlic crushed or grated 1 tsp lemon juice 1 tbsp curd 3 tbsp maida or APF 3 tbsp corn flour 1 n 1/2 tbsp rice flour Water to make batter and blanch the babycorn Salt to taste OIL to deep fry

Procedure

Remove the upper skin and hairs from baby corns.
Now blanch these with salt water for 2 to 3 min.
Now straint he water and make it little cool down.
Meanwhile prepare the masala by adding all flours with all the rest ingredients except oil.
Now add all the blanched babycorn one by one and mix well.
Heat oil for deep frying.
Preperly coat the babycorn with masala and carefully put into hot oil one by one.
Deep fry the baby corn until it turns into golden colour…and crispy.
Remove from hot oil and place on an absorbent paper so that excess oil is drained out.
Serve hot…

Notes
Add water little by little as blanched corns have water and we are adding lemonjuice and curd also.
If batter is thin in consistency,it is not well coated on baby corns.
If you feel the batter mixture is thin add more maida and cornflour.
Deep fry in low to medium heat,otherwise it will crispy from outside but will taste little raw from inside.
By blanching the baby corn,it will not taste raw after frying and it absorbs the salt water so it doesn’t taste mild.
