Slow Cooker Ground Turkey Chili
Servings: 6
Ingredients:
1 Tbsp olive oil
1 medium yellow onion, chopped
1 lb ground turkey
2 garlic cloves, minced
Salt and pepper
2 Tbsp tomato paste
1 (15oz) can dark red kidney beans, drained and rinsed
1 (15oz) can black beans beans, drained and rinsed
1 (28oz) can diced tomatoes
2 tsp chili powder
1 tsp ground cumin
1 tsp dried oregano
1 1/2 cup chicken broth, low sodium
Toppings: shredded cheese, sour cream, chopped green onions, sliced avocado
Directions:
1.) Heat olive oil in a large skillet over medium-high heat. Add onions and cook until translucent. Then add in the turkey, season with salt and pepper and cook until all sides have browned. Stir in the minced garlic and tomato paste and cook for another 2 minutes. Transfer mixture to slow cooker pot.
2.) Add in all remaining ingredients (except toppings) and cook on high for 4 hours or until the chili has thickened.
3.) Serve with toppings. Enjoy!
