Ambrosia Apple Turkey Chili Recipe

Grab a bowl of this hearty and homey meal that can take the chill off any winter night. We’ve given chili a healthy make-over by swapping out the beef for turkey and adding big chunks of Ambrosia apples. The sweetness of the apple offsets the spiciness of the chili creating a well-rounded and totally comforting bowl of yum.

Ingredients:
2 small Ambrosia apples, cored and diced
19 fl oz can red kidney beans
1 yellow onion, diced
1 red pepper, diced
1 green pepper, diced
1 jalapeno pepper finely diced
1 pound ground turkey
28 fl oz can diced tomato
2 cloves garlic, minced
1½ Tbsp chili powder
1 Tbsp cacao powder
1 Tbsp cumin
2 tsp oregano
2 tsp salt
1 Tbsp olive oil
2 Tbsp honey

Method:
In a stew pot, heat olive oil.
Add onions, jalapeno, and garlic, sauté for a few minutes.
Add peppers and salt. Sauté.
Add ground turkey and continue to cook until meat is no longer pink.
Add chili powder, cacao, cumin, and oregano.
Stir in Ambrosia apples.
Add kidney beans and tomatoes. Stir and cover.
Simmer for 2 – 3 hours, stirring periodically. Add water if needed.
Stir in honey and serve.
