Vegan Nam Prik Mushroom Chili Relish

Ingredients
2 cup of a combination of Anaheim Chili, Jalapeno, Serrano Chili, and/or Thai Chili (listed from mild to spicy)
2 cup of mixed mushrooms (whatever you can get)
1/4 cup of shallots (not peeled)
1/4 cup of peeled garlic
1/8 cup of lemongrass, sliced
1/8 cup of galangal, sliced
1 tablespoon soybean paste
Mixed Veggies (romaine, endive, sugar snap peas, carrots, cucumber, etc)
2 limes
2 tablespoon of Thai Thin Soy Sauce
1 tablespoon of Palm Sugar

Instructions
1) grill or toast the mushrooms, chili, shallot, garlic, lemongrass, and galangal until charred.
2) remove char skin from bigger chili
3) in a mortar and pestle: pound chili, mushrooms, shallots, garlic, lemongrass galangal, and soybean paste into a paste
4) season with lime juice, thin soy sauce and palm sugar. add more or less to taste.
5) wash and slice all the mixed veggies into crudite slices
