Palak Corn Recipe | Corn Palak Sabzi | Spinach Corn Curry

Ingredients
for boiling palak/spinach
1.5 liters water
300 grams washed & cleaned palak leaves
sufficient chilled water to dip the boiled palak in
for the palak corn sabzi
3 tbsp desi ghee/clarified butter
1 medium-sized onion & 7-8 garlic cloves, pureed
2 tomatoes & 1 green chili, pureed
1 tsp ginger paste
1 tsp salt
1/2 tsp garam masala
1 tsp coriander powder
1/2 tsp red chili powder
2 tsp kasuri methi/dry fenugreek leaves
1 cup of frozen sweet corn
2 tbsp malai/fresh cream
Method
1. To boil the palak, heat the water until it comes to a boil. Put in the palak and boil it for 5 minutes on high heat turning it over a few times while it is boiling.
2. Remove and dip in the chilled water until it cools down then drain out the water and blend it to a fine puree.
3. In a wok melt the desi ghee on medium heat then add the onion-garlic puree and saute until light brown.
4. Put in the tomato-green chili puree & ginger paste and saute for about 2 minutes on low heat.
5. Keep the heat on low, add the salt, garam masala, coriander powder, red chili powder, and kasuri methi. Mix well and saute for about 1/2 a minute.
6. Put in the sweet corn and stir cook for about 2 minutes. Put in the palak puree and mix well. Cover with a lid. Cook the palak until the palak and corn is cooked, about 10 minutes. Keep stirring from time to time.
7. Check the salt, then add in the fresh cream, mix well and cook for a minute or two then remove to a serving dish.
8. Serve the palak corn sabzi with roti or paratha.
