Thank you all for your continued support! You all rock! I hope you enjoy the two recipes I made with tons of love. It will be sure to fit any and all occasions you might be celebrating. It is tasty, satisfying, a great meal to stretch, and will feed many mouths! My vegetarian and vegan friends, just omit the meat, cheese, and yogurt and use oatmeal cream if you need to thicken up your white chili.

Both recipes will freeze well for those days that you may feel under the weather. Heat it up in the microwave for about 4 minutes and you will have the taste of chili! I hope my recipe will warm your hearts and your tummy! Make it your own, be inspired, be great and be kind!

Sea Salt vs. Table Salt

Red and White Chili Recipes

White Chili Recipe
½ Cup Zucchini – chopped
2 Roma tomatoes – chopped
1 TBSP Chipotle Adobo
1 Vidalia onion – chopped
4 leaves of culantro
3 celery stalks – chopped
16 Shishito Peppers
2 lbs. ground Chicken
2 TBSPS of avocado oil or preference
1 lime – Cut in halves and squeeze juices into the chicken
*Add all the items above into the pot and cook at medium
Optional: ½ cup of sofrito – highly recommended –
Add 1 can of pink beans (15.8oz)
Add 1 can of white beans (15.8oz)
Add 2 cups of frozen corn (16oz bag)
2 cups of plain yogurt (or add sour cream or cream of chicken)
1 28oz. Green Chile Enchiladas Sauce
2 TBSP Minced Garlic
2 cups of chicken broth
Seasonings:
1 Teaspoon of Sea salt or to taste
1/2 to 1 teaspoon of black pepper
½ TBSP Turmeric
½ TBSP Coriander
½ TBSP Green Sazon tropical
½ TBSP Chili powder
2 to 3 TBSP Oregano
½ to 1 TBSP of Cumin
¼ to ½ Cup of cilantro – add before you serve before to avoid the cilantro being overcooked.
*Cook on Medium-High for 20mins. to 30 mins.

Red Chili Recipe
2 TBSPS of Avocado oil
2 lbs. of Ground Beef– Drain any fat away
1 Red, 1 yellow, 1 green pepper
2 TSP to ½ TBSP Black Pepper
3 TBSPS Sofrito
1 Small white onion
1 red/purple onion
½ TSP of Adobo
2 TSP to 1 TBSP of Cumin
½ to 1 TBSP Chili
½ to 1 TBSP Smoked Paprika
2 heaping spoons of Grey Poupon Country or yellow mustard
2 TBSPS minced garlic
1 can Pinto Beans
1 can Black Beans
4 TBSPS of Chili
2 Cups of Ketchup
2 to 4 Cups of Broth
1 TSP Orange Sazon Tropical
½ TSP Turmeric
2 TSP Cumin
1 ½ TSP Coriander
2 TSP Oregano
*Cook on Medium-High for 20mins. to 30 mins.

2 Jiffy Box & decorate w/ veggies
2 Sliced Zucchini
2 Tomatoes (sliced)
6 Green Onions
2 Slices Tomatillo
1/2 Yellow Pepper (sliced thin)
Several leaves of Cilantro
Baked accordingly to the instruction
