Today I am showing you how to make a quick and easy crock pot vegan fall chili recipe that is oil free and also Starch Solution approved! It is an easy dump and go whole food plant based chili recipe that is perfect for the busy moms during the week or even for a busy weekend. The special ingredient that makes this chili a “fall” chili is butternut squash. We don’t get to make chili very often in Florida, even during the fall but it finally got cold enough so I knew I had to make it. I also made this with a little bit of a twist with how I served it for myself and really the options are quite endless! The full recipe is down below.

Quick & Easy Crock Pot Vegan Fall Chili
Ingredients:
1 can of Light Red Kidney Beans
1 can of Dark Red Kidney Beans
1 can of Tomato Sauce
1 can of Fire Roasted Diced Tomatoes
1 small can of Tomato Paste
About 1.5 cups of diced onions and peppers (I used frozen sofrito blend but you can use fresh if you want)
1 Package of frozen cubed Butternut Squash
1 Package of Chili seasoning ( I use organic so that it is gluten free)
Directions:
1. Drain and Rinse the cans of beans
2. Add everything to the crock pot
3. Stir everything so it is combined
4. Set your crock pot to High for 4 hours or Low for 6 hours. (My crock pot kicks over to keep warm after the timer is done – if yours doesn’t make sure to turn it off or to keep warm depending on when you need your chili)
You could also cook this in the Instantpot if you were really short on time just look up the conversion chart.
5. Stir everything and serve!
