VLOG: My Favorite Fall Tradition – First Chili of the Season – Delicious Chili Recipe

I’m back on the vlog after a few weeks off. This week, I share one of my favorite traditions of the season, as the temps cool down–dusting off my soup recipes.

INGREDIENTS
1 Tbsp – cooking oil
1/4 tsp – chili powder
1 Tbsp – cumin
2 Tbsp – cayenne (NOTE: I only use 1)
2 c. – chopped onion (one medium sized onion, typically)
2 garlic cloves, minced (or 1 tsp from the jar)
2 bell peppers, seeded and chopped (I use a red, yellow or orange, for color reasons only)
1 lb – ground beef (I use lean ground turkey)
3 (14.5 oz) cans stewed tomatoes (I drain them)
1 c. – ketchup
1/2 c. – brown sugar
1/4 c. – molasses (I use maple syrup)
1/4 c. – Worcestershire sauce (I often omit)
1 Tbsp – mustard
2 (15.5 oz) cans dark red kidney beans, rinsed and drained
2 (15.5 oz) cans pinto beans, rinsed and drained
1 (15. 5 oz) can cannelloni beans, rinsed and drained
NOTE: I used 5 cans of beans mix and match. I use 2 black beans, 1 kidney, 1 white bean, and 1 chili bean)

INSTRUCTIONS:
Heat oil in Dutch oven on medium high heat.
Add spices. Saute onion, garlic and bell pepper for 4 minutes.
Add ground beef and cook for 10 minutes until onion and pepper are tender
Stir in tomatoes.
Add ketchup, brown sugar, molasses, Worcestershire sauce and mustard.
Reduce heat. Cover and simmer for 20 minutes, stirring occasionally.
Fold in beans, one can at a time.
Cover and simmer for 30 more minutes, stirring to blend flavors.
Serve with shredded cheese, chopped chives, sour cream, tomato salsa, cilantro and corn chips

NOTE: add more brown sugar or molasses to increase sweetness. Best if kept in refrigerator for 24-48 hours. This intensifies the flavor.
