Spicy Chili Squid Recipe (Chow with Lau’s secret weapon salt and pepper squid recipe in Air Fryer)

Ingredients:
2 squids (fresh or frozen)
1 cup corn starch
1 teaspoon white pepper
1 teaspoon salt
1 egg
1 teaspoon sesame oil
5 cloves of garlic
2 chili peppers

Recipe:
1. Slice squid length-wise all the way through. Next, we’ll wash the squid. Bring it back to our cutting board and lightly score the inside of the squid. Slice each half into strips.

2. Combine cornstarch, salt and white pepper. In another bowl, we’ll crack and lightly beat egg add the sesame oil. To the beaten egg mixture, we’ll add about a tablespoon of the cornstarch mixture to thicken it up. Thickening the egg mixture helps to build a thicker coating. Add the squid to the egg mixture and stir.

3. Michael’s secret weapon for extra crunch on the squid is… water! Spritz some water onto our cornstarch mixture. Stir. Sprite again, stir. One last time, spritz and stir.

4. Transfer the squid to the cornstarch mixture and coat each piece with the seasoned cornstarch. Now we’re going to make sure that our squid is completely covered in the seasoned cornstarch so that they are completely dry.

5. Add the squid to the cornstarch mixture and stir, then add to the egg mixture.

6. Transfer the squid to another plate or a rack and spritz with oil until fully coated. It’s you don’t have a spritzer, pour some oil about 1 cup of oil into a bowl or plate with high sides and dip each piece into the oil, 1 piece at a time. Make sure each piece is fully coated.

7. Pre heat your air fryer for 5 minutes at 200 degrees celcius or 400 degrees Fahrenheit. Once your air fryer is done pre heating, place the squid in the basket, being careful not to over crowd. If you have a small air fryer like mine, you’ll need to air fry in batches. Return the basket to the air fryer and set the timer to 13-15 minutes at 200 degrees celcius or 400 degrees Fahrenheit.

8. While your squid is air frying, slice 1/2 a small onion, roughly chop 5 cloves of garlic and slice as much chilies as you can handle. I’ll being slicing 2 red Thai chilies.

9. In a wok over medium high heat, warm the oil, then, add the onion and SautƩ for 2-3 minutes. Then, add the the garlic and chilies and saute for a minute. By now, the squid should be ready. Throw them into the mix and saute for another minute just to combine.

10. Transfer to a plate, garnish with cilantro and serve hot.
