Malabar Special Stuffed Chicken || Kozhi Nirachathu || Chicken Roast Recipe – RKC

Ingredients
* 1 whole chicken, skin removed and clean

For Marination:
* Lemon juice – 1 tbsp
* chili powder – 1 tsp
* Black pepper powder – 1 tsp
* Turmeric powder – 1/2 tsp
* Water – as needed
* Salt – to taste

For Egg Masala Stuffing:
* Hard boiled egg 2
* Onion sliced – 2 chopped
* Green chilies,cut vertically – 2 (according to taste)
* Tomato 1, chopped
* Curry leaves- 1 sprig
* Ginger Garlic paste – 1 tsp
* Paprika powder- 2 tsp
* Garam masala- 1/2 tsp
* Turmeric powder – 1/4 tsp
* Coriander powder- 1 tsp
* Coriander leaves,chopped – 1/2 cup
* Salt- to tasteI
* Oil 1 tbsp
* Water as needed

Instructions
1. Combine together chili powder ,turmeric powder, lemon juice and salt with sufficient quantity of water to form a smooth paste.
2. Add the marinade and rub it well onto the whole chicken. Cover and marinate in the refrigerator overnight or at least for 6 hours.
To Prepare Egg Masala stuffing
1. Heat oil in a pan,add onion,green chilies,curry leaves and ginger garlic paste. Saute until onion turns golden.
2. Now reduce the flame to low andĀ add kashmiri chili powder, garam masala, turmeric powder , coriander powder and salt to taste.Saute for few minutes or until raw smell goes.
3. Now add the hard boiled eggs and mix gently.
4. Now to stuff the chicken,firstly place the eggs into the cavity and then the onionĀ mixture. Tie the chicken legs together using a kitchen twine.

For Pressure Cooker Whole Chicken
1. Pour 1 cup water into the inner pot of instant pot, Place marinated stuffed chicken on trivet and transfer into inner pot of instant pot.
2. Close the lid on pressure cooker and Set on high pressure for 6 minutes per pound of chicken. I had 3 pound chicken so I put 18 minutes to cook.
3. Once cooking time is finished, allow pressure to release naturally for at least 10 minutes. Ā 
4. Open the lid and transfer the chicken to the baking tray. Apply little oil on the chicken with a brush and squeeze little lemon juice.
5. Preheat the oven to 400 degree, keep the baking tray in the oven and select broil , for 4-5 minutes and keep it aside.
6. Make the masala gravy and place the chicken on a serving dish and serve.
To Prepare the masala gravy
1. In a bowl, Combine the fennel seed powder with garam masala ,red chili powder, turmeric and coriander powder.Keep aside.
2. Heat oil in a pan,add onion, green chilies andĀ  curry leaves, saute until onion turns golden brown.
3. Add ginger garlic paste and saute until raw smell leaves. Add tomato and cook until it turns mushy.
4. Reduce the flame to low and add the prepared masala powder and salt to taste, mix well until combined. Add little water and Saute until the masala starts to leave the sides of the pan.
5. Transfer the masala into a serving dish and place the broiled chicken on top and put the masala over the chicken and decorate. Of course you can eat after that.

Recipe Notes
Make sure to cook 6 minutes per pound of chicken.
