After the holidays, I always have some odd and ends in the kitchen. So why not make a great omelet with chili, cheese and onions. Makes for a great breakfast or brunch (or why not dinner) recipe. Grilling it on flat top grill, like a Blackstone, is perfect for a big omelette like this.
