Are you ready for chicken chili? I knew I was. This creamy white chicken chili is super easy to make and adheres pretty closely to a carnivore-ish and ketovore diet. Please skip any ingredients that may cause issue with you.

RECIPE

1 Rotisserie Chicken
1 Quart Chicken Stock
8 Oz Cream Cheese
1 Lime Zest and Juice
1 tbsp salt
¼ tsp black pepper
1 ½ tsp coriander
1 tbsp cumin
1 tbsp onion powder
1 tsp garlic powder
1 tsp chili powder
¼ tsp chipotle powder
¼ tsp of ground oregano

1) Mix all of your spices in a bowl and set aside
2) Separate the skin and meat of your chicken from the bones. Give the meat a rough chop into bite sized pieces and the skin into strips. Place the skin onto a parchment lined baking sheet and place into an oven set to 350°F for 11 minutes or until crispy
3) Place a 5 quart pot over medium high heat and add in 2 tbsp of fat of your choice. Add in your spice mix and toast for about 1 minute or until fragrant.
4) Once spices are toasted, add in your chicken stock and cream cheese and turn the heat to high. Bring to a boil and let reduce for about 5 minutes.
5) Once reduced, turn the heat off and add your chicken, lime zest, and lime juice.
6) Plate up and add sour cream, chicken skin, cilantro, and more lime.
