Hank Shaw's Venison Chili

We’re all proud of our chili recipes, but when I tell you this one is among the best, I can back it up: This recipe has won dozens and dozens of chili cookoffs all over the U.S. and Canada. It hinges on dried chiles, lots of meat, a touch of coffee and spices. Beans are optional.
You can make it with venison, like it do, or literally any other meat you can think of, from beef and pork to javelina, duck, goose, you name it.
