With this cold weather… we need chili. Chili is such an easy comfort meal! Today we are pairing it with some Mardi Gras bread or Crawfish Cornbread, whichever you like to call it.
Mardi Gras Bread:
2 cups corn meal
6 large eggs
2/3 cup oil
1 tsp baking powder
1 tsp salt
1/2 tsp creole seasoning
12 oz frozen corn, thawed
4 oz can diced jalapeños
2 lbs crawfish tails, thawed
1 medium onion, chopped
1 block (8 oz) cheddar cheese, shredded
Chili:
2 lbs ground beef
1 box 2 alarm chili mix
8 oz can tomato sauce
1 can pinto beans, not drained
1 can diced tomatoes
1 cup of water
1 1/2 tsp salt
