Hide and Seek Chicken is one of many nicknames for La Zi Ji, a Sichuan dish with meat that’s chopped small and stir-fried with so many chilies that it takes some patience to go hunting for it. Great as an snack with drinks or tea or as a main dish on rice.
Don’t be afraid though. It’s not as hot as it looks.
