Tasty Lunch / Dinner Recipe – Chapati with Lamb Curry and Salad

It’s a tasty lunch/dinner recipe. You can make this lamb curry for chapati. Enjoy chapati with lamb curry and salad.
Lamb curry recipe:
Ingredients:
•Lamb – 2 kg (I bought this lamb from Costco) (if you have 1 kg take half of all these measurement)
For Cooking Lamb:
•Garlic – 10-12 cloves
•Ginger – 1 small piece
•Turmeric Powder – 2 tsp
•Salt to taste
Other things we need:
•Pearl onion or shallots – 2 cups (If you don’t have these you can use regular onion but pearl onion is more tasty )
•Garlic – 5 cloves
•Ginger – 1/2 inch size
•Green Chili – 10-12
•Curry Leaf – 2-4 sprigs
•Coriander powder – 2 tbsp
•Chili powder – 1 tbsp
•Spicy chili powder – 1 tsp
•Cinnamon – 2-4 small sticks
•Cloves – 10-12
•Fennel seeds – 2-3 tsp
•Peppercorn – 2-3 tsp
•Whole Coriander – 1 tsp
•Bay leaf – 1
•Star anise – 3-4 small pieces
•Dry mace flower ( javitri ) – 2-3 petals
•Black cardamom – 1
•Green cardamom – 1
•Carom seed – 1/2 tsp
•Red chili – 1
•Dry fenugreek leaf – 1 tsp
•Coconut oil
•Salt to taste
Directions:
1. Clean and cut the lamb into pieces.
2. Take a clay pot, or cooking pan, ( if you have cooker you can use that also, I usually use a clay pot ) and cook the lamb meat with turmeric powder, crushed the ginger, garlic, and salt. Cover the pot and cook it well and keep it aside (If you want to add water, you can or sometimes, water will come from the lamb meat itself, so don’t put too much water).
3. Meanwhile, you can chop pearl onion, garlic, and ginger into thin slices. Slit the green chili and clean the curry leaf.
4. Heat the frying pan and add coconut oil and fry onions to light brown color. If you add little bit salt, it will fry quickly.
5. Add ginger and sauté for 2 mins then add garlic sauté for 2 mins. After you put garlic lower the flame. Last, you can add green chili and curry leaves and sauté for 3 mins.
6. While you can take another pan, roast all the spices. Grind it and make it a powder. Add these powdered spices to the sauteed onions and sauté for 3 mins.
7. Then add coriander, chili, and turmeric powder to it. Sautee for 3 mins.
8. After that, take cooked lamb meat and separate it from the gravy. Add it to the onion mixture and mix it well. Don’t put any gravy or watery part to the onion. Just keep it aside. Sautee for 5-10 mins. You can add salt oil you want to. Mix all of the ingredients well. Then add gravy (water from cooked mutton) and mix it, cook it, and stir it well for another 3-5 mins. Switch off the flamed and add some fresh curry leaves to it.
Lamb curry is ready to serve! You can have lamb curry with rice or chapati.
