For all you naysayers that say not to put chicken in chili, you should try it. I used to use pork all the time and it had to simmer for 2-3 hours. I changed to chicken one time to gain some speed and nobody could tell the difference so I stuck with it. If you like pork better, feel free to go that way & just add 2 hours to your cooking time.
