Here are 3 Ways to make your 3-Way Cincinnati chili, all based on the original Skyline recipe, including two VEGETARION OPTIONS, and the secret step that makes it smooth like the restaurant. If you see recipes out there that call for nonsense like nutmeg or diced tomatoes, RUN the other way. This is the real deal here.
Ingredients:
2 to 2½ Cups water (2½ Cups will make it original thin and saucy like at Skyline restaurants).
1 15 oz. can of tomato sauce
1 Tablespoon white vinegar
2 teaspoons Worcestershire sauce
1 lb. ground beef OR 1 lb. impossible burger OR 1 lb. Beyond Beef OR ¾ to 1 cup dry lentils (less for a thinner chili)
1 medium onion, finely chopped or grated
2 cloves garlic, finely minced, covered in 1 teaspoon salt and smashed to a paste
1 large bay leaf
½ oz. baking chocolate OR 1 teaspoon unsweetened cocoa powder
1 teaspoon ground cumin
½ teaspoon cinnamon
1 teaspoon powdered allspice
2 Tablespoons chili powder (chili powders vary in heat, so adjust to taste)
AND to serve:
Thin spaghetti, cooked al dente (this recipe should cover 2 pounds/8 servings)
Finely shredded MILD Cheddar cheese
Shredded onions
Red kidney beans
