Chicken Masala Ingredients
For marinating the chicken
• Chicken 500 gram
• Salt to taste
• 1/4 tsp turmeric powder
• 1/2 tsp spicy red chili powder
• 1 tsp roughly crushed ginger and garlic (details in notes)
• 1 tsp lemon juice
• 2 tsp oil (you can use any cooking oil)

For making chicken masala powder
• 1 tbsp coriander seeds
• 1 tsp cumin
• 1 tsp whole peppercorns
• 1 tsp fennel
• 4 cloves
• 1-inch cinnamon
• 1 black cardamom
• 2 green cardamoms
• 1 petal of mace (javitri)

For making chicken masala curry
• 3 tsp oil
• 1/2 tsp cumin
• 3 medium size onions, chopped
• 1 tsp crushed ginger and garlic
• 1/4 tsp turmeric powder
• 1 tsp Kashmiri red chili powder
• 2 tsp coriander powder
• Salt to taste
• 1 cup fresh tomato puree
• 1 Green chili
• 2 tbsp coriander leaves
• 1 tsp crushed Kasuri Methi

Step by step instructions on how to make chicken masala
1. In a mixing bowl, combine chicken with all the ingredients mentioned under marinating the chicken. Set it aside for 30 minutes.
2. In a heavy bottom pan, sauté all the ingredients mentioned under chicken masala powder on medium-low heat until aromatic. Remove it on a plate. Let it cool down completely. Grind it to a fine powder. Do not add water.
3. Heat 3 tsp oil over medium heat.
4. Add cumin and stir until it crackles.
5. Add onions and garlic, saute until onions are lightly golden.
6. Add the marinated chicken, cook until the color of the chicken turns from pink to white.
7. Add turmeric, red chili powder, coriander powder, and salt to taste.
8. Add 1 cup fresh tomato puree. Cook for 5 minutes.
9. Cover and cook until the chicken is completely cooked. Stir it in between as required.
10. Add 1/4 cup water, ground masala powder, green chili, coriander leaves, Kasuri methi. Stir to combine.
11. Add 1/4 cup water (only if you need gravy for chicken masala). Cover and cook for 2 minutes.
12. Spicy Chicken Masala is ready to serve. Serve hot with Roti/Naan.
