VEGETABLE CHILI RECIPE:
Ingredients
-1 can of kidney beans
-1.5 cans of black beans
-1 can of diced tomatoes
-1.5 zucchinis
-3 red onions
-1 tablespoon of olive oil
-1 large bell pepper
-4 tomatoes
-2 large carrots
-around 1 cup of water
-3 tablespoons of chili powder
-1 jalapeno pepper
Method:
1. Chop the onions and fry that with the olive oil.
2. Chop the zucchini, carrots, bell pepper, jalapeno, and tomatoes. Add those to the pot.
3. Add the diced tomatoes.
4. Rinse the beans well and then add those.
5. Add water and the chili powder (do less if you don’t want it as spicy).
6. Bring everything to a boil and then let it simmer for 1 hour.
7. Serve over rice and enjoy!
