Bake at 300 Degrees (F) 4 hrs
Remove the foil
The last hour bake at 350 Degrees (F) for 1 hour
Total cook time 4 to 5 hours the longer the better

Ingredients
5 Pound of chuck
4 roasted Anaheim peppers or poblano peppers
1 Jalapeño
1 serrano (for spice)
1 white onion
1 to 3 green onions
8 bay leaves
8 garlic cloves
3 Tbsp chicken bouillon
2 Tbsp olive oil
1 Tbsp hatch chili powder (optional)
1 tsp black pepper
1 tsp onion powder
1 tsp marjoram (omit if not available)
1 tsp sugar
1 tsp ground cumin
1/2 tsp ground clove
1/2 tsp cinnamon
1/3 cup white vinegar
2 to 3 cups of water
Toppings- onion, cilantro, and lime
