Thinking of healthy dinner ideas for the whole family can sometimes leave us scratching our heads. Here is an easy chili recipe that your whole family can enjoy. This homemade chili requires just a handful of ingredients, and you can throw in whatever you have in your fridge that needs to be eaten. It also tastes even better the day after as leftovers! The exact recipe on how to make chili is down below but feel free to improvise and get creative! And while the sour cream and cheese toppings are optional… ADD THEM. Plus some green onions and bacon, too!

Ingredients:
1 lb ground beef
1/2 onion, chopped
2 cloves of garlic, chopped
1-2 cups of chopped vegetables of choice (ex. zucchini, bell peppers, carrots, spinach)
1 1/2 tbsp of chili powder
1 tsp paprika
1 tsp cumin1
15 oz can of cannellini beans, drained and rinsed
1 4oz can of mild diced green chiles (optional)
1 14-16oz can of diced tomatoes or marinara pasta sauce (pasta sauce is what I prefer!)
2-3 cups chicken broth
1 tsp of salt or to taste
shredded cheddar cheese and sour cream for toppings
Directions:
1) Chop garlic, onion, and additional vegetables of choice.
2) In a heavy bottom pot, add oil and saute garlic until fragrant.
3) Add vegetables and saute until softened.
4) Add ground beef and saute, breaking up the meat with your spoon, until mostly cooked through.
5) Add chili powder, paprika, and cumin, and saute until fragrant (about 1 minute).
6) Add your drained and rinsed beans, green chiles if using, and diced tomatoes. Give it a stir.
7) Add chicken broth until mixture is just covered.
8) Bring to a boil and then let simmer for at least 20 minutes, but 30-40+ minutes is better. Stir occasionally to prevent the bottom of the pot from burning.
9) Add 1 tsp of salt, or to taste.
10) Turn off the heat, put in a bowl, and top with cheese and sour cream.
You can also make this recipe in your INSTANT POT. Just saute your onion, garlic, veggies, meat, spices in your instant pot on the saute function, add the remaining ingredients (beans, tomatoes, chicken broth), and pressure cook on HIGH for 10 minutes with natural release. Add salt.
