In today’s What’s for Dinner video, I’ve got 4 easy and tasty pantry meal ideas for you. I am working on getting things used up from my freezers, so I am trying to get creative with what I find. We’ll be cooking a breakfast for dinner with sausage cheddar drop biscuits and gravy. Plus we’ll fry some eggs to have along with that. We’ll also be making a super easy beef stew that is really a great dump and go crockpot recipe. I’ve also got a quick and easy chili recipe for you. And you can never go wrong with meatloaf with sauteed slaw mix and a cheesy potato casserole (the potato casserole recipe will be coming soon in an Easter side dish video!). 👩🏻‍🍳 RECIPES:
Sausage Cheese Drop Biscuits
2 cups of all purpose flour
1 tbsp of baking powder
9oz of sausage (cooked into crumbles- I use 6 frozen sausage patties which add up to be 9oz from the package I buy)
1 1/2-2 cups of shredded sharp cheddar cheese
1 cup of milk
1 egg
salt and pepper to taste (I don’t add, but feel free to)

Preheat oven to 400 degrees. In a bowl, whisk flour and baking powder together. Then add the cheese and cooked sausage and combine. In a separate bowl, whisk together the milk and egg. Then stir into the flour mixture until well combined.

I use a ice cream scoop to make equal sized scoops on the baking pan. You could also use maybe a 1/4 or a 1/3 cup measuring cup or a large spoon.

Bake for 20-22 minutes or until lightly golden brown on top and baked through. I usually get 12-15 of these.

Sausage gravy
cooked sausage
enough grease/butter to equal about a 1/4 cup
2 cups of milk
1/4 cup of flour
salt and pepper to taste

I maybe used 3 sausage patties. I didn’t want a ton of sausage in the gravy since there was some in the biscuits.

After you have cooked the sausage on medium heat, use enough sausage grease/butter to equal about 1/4 cup. Then add 1/4 cup of flour and cook for a minute or two. Then add in your milk and seasonings. Allow to cook over medium heat until thickened.

Beef Stew Recipe:
NOTES: used 1 pound of stew meat
1 tbsp of tomato paste instead of the whole can
added a can of petite diced tomatoes
thickened it with a cornstarch slurry (1 tbsp of cornstarch mixed with 1 tbsp of water, can repeat if you would like it thicker)

Meatloaf Recipe:

Chili Recipe:
1 onion, diced
1 pound of hamburger meat, cooked
1 can of petite diced tomatoes
8oz can of tomato sauce
2 cans of pinto beans
1 can of kidney beans, drained
1 1/2-2 cups of beef broth
1 chili seasoning packet
chili powder
mexican oregano
onion powder
garlic powder
cumin
coriander
salt and pepper

In a large pot over medium heat, saute your onion until softened. Then add all other ingredients. Seasonings are to taste. I don’t measure. Remember that you can always add more, but can’t take away.

Bring to a boil and then lower the heat and simmer for 10-15 minutes.
