You will need:
Mushrooms: 1 packet
Chopped tomatoes: 1
Chopped onions: 1
Chopped coriander leaves: 1 tbsp
Curry leaves: 6 to 8
Garlic-ginger paste: ½ tsp
Red chili powder: 1 tsp
Coriander powder: 1 and ½ tsp
Garam Masala powder: 1 tsp
Black pepper powder: 1 tsp
Cumin seeds: 1/3 tsp
Whole red chilies: 2
Haldi / turmeric powder: ¼ tsp
Salt (as required)
Preparation:
Clean mushrooms (1 pcket) properly with water and pat-dry
Chop mushrooms into medium pieces and keep them aside

In a pan, add oil (4 tbsp) and let it heat
Add jeera / cumin seeds (1/4 tsp) and whole red chilies (3)
Let cumin seeds splutter
Add chopped onions (1) and saute for 1 minute
Add curry leaves (6 to 8) and saute
Add garlic-ginger paste (1/2 tsp) and saute
Add pinch of salt and mix well
Cover and cook till onions turn translucent
Saute for 1 minute
Add chopped tomatoes (1) and saute
Add haldi / turmeric powder (1/4 tsp) and mix well
Cover and cook till tomatoes become soft and mushy
Saute for 1 minute
Add red chili powder (1 tsp), coriander powder (1 and 1/2 tsp) and mix well
Add chopped mushrooms and mix well
Cover and cook for 5 to 10 minutes till mushrooms ooze water and are well cooked
Mix intermittently
Mushrooms begin to lose moisture and ooze water
Add salt (as required) and mix well
Continue to cook till mushrooms are well cooked
Add garam masala powder (1 tsp), black pepper powder (1 tsp) and mix well
Saute and cook for 2 to 4 minutes till all the water absorbed
Remove from flame
Transfer to a serving plate
Mushroom Sukka is ready
