Pickle no. 1
Ingredients:
400 g red pickle chili
4-5 tbsp (50 g) coriander seeds
2 tbsp (10-12 g ) fennel ( saunf)
1 tbsp rai (5-7 g) (small black mustard)
1 tbsp kalonji ( 5-7 g)(nigela seeds)
1 tbsp methi seeds (5-7 g ) (fenugreek seeds)
Roast all the above ingredients lightly on very low flame till aromatic & fragrant.
1 tbsp turmeric powder
4 tbsp salt ( 50 g )
3-4 tbsp white vinegar
Raw mustard oil as required
Pickle no.2
Ingredients:
400 g red chilies sliced
4 tbsp salt
2-3 tbsp white vinegar
1 tbsp turmeric powder
1 tbsp roasted rai powder
1 tsp roasted methi seeds
Red chili powder to taste ( optional )
250 ml groundnut oil / sesame oil
