LEMON Overnight oats
1 cup mixed berries
1/2 cup rolled oats
1/2 cup plant milk
1 pinch of salt
1 tbsp chia seeds
1 tablespoon maple syrup
1 tsp lemon extract
Lemon zest (optional)
Can also add a dash of vanilla extract

Put berries in a mason jar. Mix together the rest of the ingredients in a bowl and pour over top. Make sure the oats are covered in liquid, you may want to add a little more water. You can add some coconut flakes on top.
