Meethi Puri with Chana Masala
Ingredients for Meethi Puri:
All-purpose flour 3 cups
Semolina ¼ cup
Salt ½ tsp
Powdered sugar 1½ tbsp
Ghee 1½ tbsp
Water as req
Oil (for frying)
Sugar Syrup as required
Ingredients for Chana Masala:
Oil 1 cup
Cumin seeds 1 tsp
Black peppercorns ½ tsp
Ginger garlic paste 1 ½ tbsp
Onion paste 1 cup
Tomato paste 1 cup
Salt 1½ tsp
Red chili powder 2 tsp
Turmeric powder ½ tsp
Cumin powder ½ tsp
Coriander powder ½ tbsp
Yellow lentil (boiled and blended) 1 cup
White Chickpeas (boiled) 2 cups
Water as required
Directions for Meethi Puri Preparation:
In a bowl, add all the ingredients and mix until well combined. Gradually add water and knead into a smooth soft dough. Rest for 30 minutes.
Take small portions of dough, roll into thin discs and deep fry in oil until crispy and golden brown. Strain and transfer the hot puri in sugar syrup and let it soak for one minute. Strain out of the syrup and set aside.
Directions for Chana Masala preparation:
Now, in a pot, heat oil and add cumin seeds and black peppercorns. Fry for 30 seconds.
Add ginger garlic paste and saute until brown. Add onion and tomato puree. Cover and cook on low flame for 4-7 minutes.
Add salt, red chili powder, turmeric powder, cumin powder, coriander powder and cook for 2-3 minutes or until oil separates. Add water if needed.
Now, add yellow lentil and simmer over low flame.
Add boiled chickpeas and cook for 7-8 minutes over medium to low flame.
Cover and cook for 8-10 minutes over low flame.
Garnish with green coriander and serve. Your Chana Masala is ready. Serve with meethi puri.
