Easy chili on the weber smokey mountain. I’m not a huge chili guy but man did this turn out great! Not my recipe, i found this hidden gem on the Facebook Group The Art of Smoke and Grill-A Growing BBQ Community.
Recipe/Directions:
5 Quart Dutch Oven
One medium onion
One red bell pepper
One Green Bell pepper
One Yellow Bell Pepper
One Orange Bell Pepper
1 lb. Ground beef
1 lb. Ground Chuck
1 lb. Ground Italian Sausage
1/2 lb. Bacon
2 tbls Garlic
2 tbls Brown Sugar
1 cup Beef Broth
One Can Each: Dark Red Kidney Beans, Light Red Kidney Beans, Black Beans, White Beans, Pinto Beans
1 Can Rotel
1 Can/Bottle of your favorite Beer
3 oz. Tomato Paste
14.5 oz. Diced Tomato
10 oz. Green Chile Enchilada Sauce
2 packets of your favorite Chili Seasoning
Directions:
Sweet your Onions and Bell Peppers
Add Tomato Paste and stir until it darkens
Add Beef Broth the Beer
Add Chili Seasoning
Add Brown Sugar
Add Tomatoes and Green Chile
Add Rotel
Stir and season to taste with Salt/Pepper/Garlic/Red Pepper Flakes
Run Grill or Oven at 300 until Huge meatball reaches 150-1550 internal temp.
Stir every 45 minutes while on the grill/oven
