Cá Kho Tộ – Vietnamese Caramelized & Braised Catfish (Easy & Quick Recipe)
Serves 5
Ingredients
2 lbs catfish fillets (cut into 4-inch pieces)
2 tablespoons fish sauce
1 tablespoon granulated sugar
1 teaspoon chicken bouillon powder
¼ teaspoon ground black pepper
½ teaspoon thick soy sauce
1 tablespoon vegetable oil
1 shallot (finely diced)
3 garlic cloves (finely diced)
½ cup Coco Rico coconut soda
½ cup water
Garnishes
1 green onion (thinly sliced)
Red chili peppers (thinly sliced)
Ground black pepper
Instructions
Marinate catfish steaks with fish sauce, sugar, bouillon powder, ground black pepper and thick soy sauce for 30 minutes.
In a claypot or skillet, heat vegetable oil on medium high. Add shallots and garlic. Saute until fragrant (5 seconds).
Add marinated catfish and all its liquid. Toss in aromatics. Add coconut soda and water. Reduce the heat to a medium-low simmer and cook for 10 minutes, uncovered.
Gently move fish around so they are all covered in the liquid. Continue to braise on a medium-low simmer for 10 more minutes.
Garnish with green onions, chili peppers and ground black pepper.
