Ingredients:
Baby corn – 200 gms
All purpose flour – 4 tbsp
Corn flour – 2 tbsp
Salt – 1 tsp
Black pepper – 1/2 tsp
Kashmiri chili – 1 tsp
Water – as required
Oil – for frying
Sesame oil – 1 tbsp
Garlic, finely chopped – 1 tbsp
Spring onions, chopped – 2 tbsp
Dark soy sauce – 1 tsp
Vinegar – 1 tsp
Sweet chili sauce – 1 tsp
Sriracha – 1 tsp
Spring onion greens, chopped – 2 tbsp
Sesame seeds, white and toasted – 1 tsp
Instructions:
1. Add all purpose flour, corn flour, salt, pepper, kashmiri chili in a bowl and mix. Add water gradually to make a thick batter.
2. Add baby corn to batter and mix well. Let it rest for 15 minutes.
3. Heat oil in a pan and add baby corn one by one. Deep fry till golden and crisp. Keep aside.
4. In a pan add sesame oil. When hot, add garlic and saute for 30 seconds.
5. Add spring onions and saute for 30 seconds.
6. Add all sauces and vinegar and saute for 30 seconds.
7. Add baby corns and mix till they are coated in sauce.
8. Add spring onion greens and sesame seeds.
9. Serve hot.
