How to make: Honey Chili Cauliflower

My daughter and I recently went to New York and tried a honey, chili cauliflower dish. We loved it so much so I had to make a copycat version for her.

Ingredients:
1 pound of cauliflower florets
1 cup of all purpose flour
2 tablespoon of corn starch
1 teaspoon of red chili powder
1 teaspoon of smoked paprika
1 teaspoon of salt
Dash of pepper
1 tablespoon of grated ginger
1 tablespoon of minced garlic
Saffola or any cooking oil for frying

For the gravy:
2 tablespoons of oil
1 tablespoon of grated ginger
3/4 cup of chopped onions
1 tablespoon of chopped garlic
1/2 tablespoon of red chili sauce
1/2 tablespoon of ketchup
1/2 tablespoon of soya sauce
1 teaspoon of white vinegar
Handful of spring onions
Cornstarch slurry with 1 tablespoon of cornstarch and 8 tablespoons of water
Salt to taste
1/2 teaspoon of Sesame seeds

Description:

1. Take 1 pound of cauliflower florets and blance in hot water for a minute and keep aside.
2. Then, in a separate bowl, combine 1 cup of all purpose flour, 2 tablespoons of corn starch, 1 teaspoon of red chili powder, 1 teaspoon of smoked paprika, 1 teaspoon of salt, a dash of pepper, 1 tablespoon of grated ginger and garlic each and 1 cup of water.
3. Make sure to gradually add in the water to make a smooth, thick batter.
4. Add the cauliflower to this mixture so its well coated.
5. Next, in a frying pan, add some oil and deep fry the cauliflower till its a nice, golden color.
6. Once its ready, remove and keep aside.
7. If you like it extra crunchy, like we do, double fry again once more for a minute or two.
8. In a separate pan, take 2 tablespoons of oil, 1 tablespoon of grated ginger, 3/4 cup of chopped onions, 1 tablespoon of garlic and sauté for 2 minutes.
9. Then add 1/2 tablespoon of red chili sauce and 1/2 tablespoon of ketchup, 1/2 tablespoon of soya sauce, 1 teaspoon of white vinegar and a handful of spring onions.
10. Sauté for about 2 minutes and then make a cornstarch slurry with 1 tablespoon of cornstarch and 6-8 tablespoons of water.
11. I added a bit more water and some salt to make sure it was the right consistency.
12. Now, switch off the gas and add a dash of honey.
13. Lastly, add the cauliflower in and mix well.
14. Sprinkle with some sesame seeds.
15. And thats it!
