White Bean Chili! Veganuary as Fork 2020!
Ingredients:
1 package of Vegan Sausage (we used Beyond Meat Brats)
1 large can of diced Tomatoes
4 cans of White Beans (we used Cannellini & Small White Beans)
1 can Full Fat Coconut Milk
1 small can diced Mild Chili Peppers
1 pound sliced White Mushrooms
1 pound Baby Carrots
1 package Frozen Corn
1 teaspoon Sea Salt
1 teaspoon Thyme
1 teaspoon Granulated Onion
1 teaspoon Granulated Garlic
Pepper to Taste
Water if needed

Roast the Sausage in a pan in a 350 degree oven for 30-40 mins or until cooked but not overdone.
Play all of the remaining ingredients into an Instant Pot (pressure cooker). Cook under high pressure for 15 minutes. Let the steam release naturally.
After the sausage has cooled, slice and add to the pot. Give it a good stir. Serve over rice. Enjoy!
