Chili oil wontons for this CHILLY DAY. Its -45 right now in Canada and the feeling of these wontons scorching the roof of my mouth is AMAZING.
Chili Oil
* 1 cinnamon stick
* 2 bay leaves
* 4 star anise
* 1 tbsp coriander
* 2 tbsp Szechuan pepper
* 2 bay leaf
* 1 cup vegetable or canola oil
Pour over infused oil in a heat proof bowl
* 1 tblsp ginger
* 2 tbsp garlic
* 2 tbsp chili flakes
* 2 tbsp Szechuan pepper flakes
* 2 tbsp gochuchang pepper flakes (for colour)
* 1 tsp salt
* 2 tsp sugar
Wonton Filling
* Lean ground pork
* 1/4 cup of green onions
* 3 gloves of garlic
* 2 tbsp ginger
* 1 tbsp corn starch mixed with water
* 3 tbsp chicken stock
* 2 tbsp light soy sauce
* 1 tbsp sesame oil
* 1 tsp white pepper
* 1 egg
Garnish with green onions, cilantro and sesame seeds
