Egg Plant Bhurta (Mashed)
Recipe By Deep Bowl:

Ingredients:
Eggplant 1 (big)
Red Chili Flakes 1 Tsp
Salt (as per taste)
Onion 1/2 (big)
Fresh Coriander (few leaves)
Fresh Mint (few leaves)
Green Chilies 1

Directions:

Take an eggplant and insert a skewer in it from one side so it is easy to hold, turn on the flame and put the eggplant on a stove’s grill, now move it slowly and cook from all sides, when it becomes a hard black crust from all side then remove the skewer and put eggplant in a plate, remove hard crust and take only eggplant’s pulp. now add thinly sliced onion, add chopped fresh coriander leaves, add chopped green chilies, chopped mint leaves, red chili flakes, and salt, and mix it well.
Serve with paratha, pickle, and sauce.
