Apricot garam masala
Ingredients:
(Masala)
-1 quart apricots
-13.5 FL. OZ. Coconut milk
-13.5 FL. OZ. H2O
-1 tbsp ginger powder
-1 tbsp brown mustard seed
-1 bay leaf
-1 Batavia cinnamon stick
-4 green cardamom pods
-2 whole clove
-2 tsp cumin
-1 tbsp coriander
-2 tbsp mace
-salt to taste once chilled
-rice oil to coat pan and sautƩ
Puree the living hell out of everything once cooked, i blended for about 6 minutes.
(Compressed Apricot)
-2 cups diced apricot
-2 tbsp wildflower honey
-2 tbsp rice vinegar
-1 tbsp Korean chili flake
-salt to taste
Garnish with pepitas, pickled onion, blistered shishitos, micro radish, chili threads, compressed apricot and flakey salt.
